So I'm trying to change up my diet from what it is now any suggestions on what you should eat from monday until the saturday of a Race?

Well, I'm by no means an expert here, but I've heard that "carb loading" the night before a race is NOT the thing to do. You're "supposed" to carb load 2-3 days before hand and the night before you should take in some protein.

I'm not sure what this is supposed to do, its just what my coach told me one time.

do you normally keep what you eat consistent?

you body naturally doesnt like change that much so changing it to much isnt good. now if you are changing little things like switching to something healthier snack wise then i dont see to much of a problem with that but if you change it to much you wont like what happens come friday.

I know i'm a little late for this post, but i thought maybe i could help...You should obviously keep everything healthy all week, but the most important day of the week is two days before your race(Thursday night if your meet is Saturday)where you should do the "carb loading" spoken about earlier...eating pasta is the best(maybe have a family pasta night that night?) On race day keep everything plain and natural. Plain bagels(wheat), plain cooked pasta, fruits, etc. will not upset your stomach and the fruits will give you energy. Also always keep your fluid levels up(water or Gatorade preferably) Hey that's all i got and GOOD LUCK!
